been working to identify what’s happening to a food that was once known
as the staff of life. One thing I know for sure is that we can’t point
to just one reason. Through years of research and farming I’ve come to
understand that, in fact, there are many reasons, a constellation of
farming, milling and baking practices, that cause people to feel sick
after eating wheat products. Yet this need not be the case. We can once
again have good, healthy bread though proper farming, milling and
baking practices."
